Strawberry and Cream Smoothie
Autumn is my favorite season of the year with the changing of the leaves — beautiful red, yellow and orange colors slowly appearing; rummaging through my boxes for a nice scarf to warm up to, and brisk walks through the park.
During these months, I enjoy all the organic produce that is readily available from fall strawberries to wild blueberries and pumpkins to squash. All I can think about are the lovely berry smoothies, and pumpkin and squash soups that will be consumed.
In honor of Organic Harvest Month (September), where the objective is to highlight organic agriculture and to promote and celebrate the bounty of the organic harvest, I made a simple strawberry and cream smoothie.
Ingredients
- 1 cup of frozen strawberries
- 1/4 cup of cashews, soaked 2-4 hours (optional)
- 3/4 cup of water or coconut milk for a creamy texture
- 2 dates, soaked for 30 minutes to soften them up
- 1/2 tsp of vanilla extract
- pinch of salt
Instructions
- Place the cashews, dates and water in a high powered blender and puree until smooth.
- Add the frozen strawberries, vanilla extract and pinch of salt to the cashew mixture.
- Blend all the ingredients until creamy.
- Enjoy this creamy and rich drink when you want a little sweet treat. Try substituting the water for Little Me Tea for some sweetness – you might not even have to add the dates.
